[Doc] Correct the name of the Alpine Linux Synapse package maintainer in docs/setup/installation.md

I'm having trouble getting PR #17846 submitted which is a simple correction to docs/setup/installation.md to update the name of myself who has been maintaining the Matrix Synapse package on Alpine Linux since June 2024 (5 months now) since version 1.109.0. I have signed a CLA in the past in PR #17140 and I have been given no instructions on how to sign the CLA to get PR #17846 to be accepted.

You will also see that @MadLittleMods has confirmed that I am that current maintainer, but I will include the link here in this issue to enable anyone to be able to confirm the fact that https://pkgs.alpinelinux.org/packages?name=synapse&branch=edge indicates jahway603 is the maintainer.

I would be very grateful, since my PR is not being accepted, if another project contributor could "Correct the name of the Alpine Linux Synapse package maintainer in docs/setup/installation.md" as per PR #17846.
